What's for Dinner Wednesdays - Chocolaty Eclair Dessert

Chocolaty Eclair Dessert!
This is a very rich dessert so it is best for large gatherings rather than just for a small family (since a little goes a long way).  This is also a very fun dessert for kids to help you make.  KJ was my big helper today :)

Ingredients:

2 pks of French Vanilla Instant Pudding
Milk
9 oz thawed Cool Whip
1 pk whole Graham Crackers

Chocolate Sauce:
2 cups Confectionary Sugar
1/4 cup melted margarine
1tbsp Milk
1tsp Vanilla
1 egg
5 tbsp Chocolate Coco
2 tsp oil


In a 9x13 dish, have your kiddo place a flat layer of graham crackers on the bottom.

Fix the 2 pks of Instant Pudding according to the directions on the package.
Stir until thick, then add in the entire container of thawed Cool Whip.
Mix until it is a light yellow color.


On top of the first layer of graham crackers, take half the pudding and cool whip mixture and put on top.  Then add another layer of graham crackers as you see KJ doing.  Use the last half of the pudding mixture on top of those crackers, then add a last layer of graham crackers to the very top.
So you you have five layers.... 3 crackers, and 2 pudding/cool whip mix.


Use a sparate mixing bowl to start your chocolate sauce.
Mix all of the wet ingredients first.
1/4 cup Melted Margarine
1 tbsp of milk
1tsp of vanilla
1 egg
2 tsp oil


Once that is all mixed together, add the dry ingredients.
2 cups Confectionary Sugar
5 tbsp Chocolate Coco Powder
You can mix with a hand mixer or do it with a whisk.


Add the chocolate sauce to the top of the last layer of graham crackers. 
Put in the refrigerator and let chill for several hours.
